Recipe: Roasted Acorn Squash

We have another deliciously healthy side dish that you can add to your Thanksgiving feast. Our Roasted Acorn Squash is simple to make, just slice your acorn squash and drizzle it with olive oil and an autumn spice mixture. Roast and serve. 

The presentation of this dish alone is pretty impressive. Your guests will want to dive right in! Oh, and this is another gluten-free, vegetarian and vegan dish, so everyone can enjoy! 

Roasted Acorn Squash
One acorn squash
Olive oil (enough to drizzle)
1/3 course chopped walnuts

1 ½ tablespoon brown sugar
½ teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon water
1/3 cup course chopped walnuts

Method of Preparation
Slice wedges of acorn squash. Place wedges on cookie sheet parchment lined. Drizzle olive oil or rub. Roast on 400 degree oven for 20 minutes. Add glaze and chopped walnuts and cook for an additional 5 minutes.
